Christmas Sides To Satisfy Everyone: 4 Sides In Under 40 Minutes

Holiday entertaining this year? The holidays are chock full of parties, get togethers and various festivities. And the food. The FOOD!

I love party food. Party meals are fun too but can be daunting for a host or hostess. Have no fear! You decide on the main course and dessert, and leave the sides to me! These side dishes are delicious, easy and healthy too.

The first is my mashed potatoes, so good you’d never believe they’re dairy free, gluten free, vegan and paleo. Next is sweet and spicy carrots, followed by bacon and brussels and last but not least, roasted cauliflower.

  • 3 medium sized bakers potatoes, rinsed off and chopped
  • 1 red onion, chopped
  • 1/3 cup vegetable stock
  • 3 tablespoons refined coconut oil
  • 1 tablespoon salt
  • 1 teaspoon pepper

Boil the chopped potatoes for about 15 minutes or until you can start to stick a fork through them but they are still firm. Add in the chopped onion for the last 5 minutes or until everything is tender. Drain off the water and add the potatoes back into the pan with the remaining ingredients. Mash everything together and serve hot.

Sweet And Spicy Carrotscarrots

  • 4 carrots, skinned and chopped into rounds
  • 1 cup 100% orange juice of choice
  • 1 tablespoon honey
  • pinch of ginger
  • pinch of cinnamon
  • pinch of cayenne pepper

In a small sauce pan on medium/high heat, simmer all the ingredients together until the juice evaporates and the carrots are soft, or about 20 minutes

 

Baked Bacon And Brussel Sprouts

  • 4 slices bacon, fried
  • 3 cups of brussel sprouts, ends cut off and quartered

Fry bacon on medium heat while flipping throughout, until preferred crispiness. Take bacon out and set aside. Do not drain the grease from the pan!

Cut the ends off of the brussel sprouts and then cut in quarters, or so that all the brussel pieces are about equal size. Add them into the pan you fried the bacon in and coat the brussel sprouts with the grease.

Place brussel sprouts on a baking sheet and bake for about 20 minutes in a 375 degree oven or until they begin to brown. In the last 5 minutes, crumble the bacon on top of the brussel sprouts and mix.

Tip: When you take the bacon out, lay it on a paper towel and dab off the excess grease.

Roasted Cauliflower 

Cauliflower is one of my favorite vegetables, it’s so versatile and can take on different flavors and textures. In this recipe, cauliflower is mixed with garlic and olive oil and becomes almost nutty.

  • 1 head cauliflower, chopped or sliced and broken up into pieces20160504_195431
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 2-3 tablespoons olive oil (to coat)

Preheat oven to about 375 degrees. Combine ingredients together in a bowl. Cover a baking sheet with aluminum foil (for the fastest and easiest clean up!) and spread cauliflower evenly on the baking sheet. Bake until it begins to brown on the outside or to your preferred texture- about 25 minutes.

Emmy’s Beef Goulash

Goulash is a very traditional dish and well I love its simplicity, I always longed for a hint of heat and some extra spices. This take on goulash is just that and quick enough to throw together on a work night too.
Emmy’s Beef Goulash

  • 2 onions, chopped
  • 5 garlic cloves, diced
  • 1 teaspoon olive oil
  • 2 pounds ground chuck
  • 30 oz. (2 cans) diced tomatoes
  • 15 oz. (1 can) tomato sauce
  • 3 cups water
  • 1 heaping tablespoon of dried oregano
  • 1 heaping tablespoon of dried basil
  • 1/4 teaspoon cayenne pepper
  • 2 cups noodles (zoodles, rice/corn/lentil noodles are all healthy additions as well)
  • pinch of salt and pepper

Directions: Add the onions and garlic to olive oil in a pan over medium heat and cook for 5 minutes. From there, add the meat and cook until browned. Mix in the tomatoes, water and noodles and cook until the noodles are al dente or to preference. Enjoy=)

Sweet Potato Slices

  • 2-3 sweet potatoes, depending on the size
  • 2-3 tablespoons olive oil
  • 1 tablespoon pepper
  • 1 tablespoon salt

Cut length wise and thin and place onto a cookie sheet.  Add the olive oil and seasonings and make sure they are all well coated. Space the slices equal distance apart into the pan and bake at 425 degrees for about 20 minutes and make sure flip halfway through. Set to the side.

  • 1 tablespoon olive oil
  • 3 tablespoons water
  • 1 pepper, chopped
  • 1 onion, chopped
  • 1 pound ground beef
  • 1 cup tomato sauce
  • 1 tablespoon molasses
  • 1 tablespoon honey
  • 1 tablespoon garlic powder
  • ½ teaspoon chili powder
  • ½ tablespoon yellow mustard
  • ½ cayenne pepper

In a sauce pan on medium heat, add olive oil and water and onions and peppers to the pan and cook about 10 minutes. Next, add the beef and cook until brown.

Mix the rest of the ingredients into the meat mixture and simmer about 20 minutes.

 Sweet Potato Sloppy Joe Sliders

Take your sweet potato slices and top them with 1-2 tablespoons of meat mixture and enjoy!

Crock Pot Italian Beef

  • 1 1/2 pound chuck roastIMG_20160827_182022
  • 1 cup beef stock
  • 1 onion, sliced
  • 1/2 green pepper, sliced
  • 1 tablespoon honey
  • 1 tablespoon garlic powder
  • 1 tablespoon parsley
  • 2 tablespoons oregano
  • 1 teaspoon pepper
  • 1 teaspoon basil
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1 bay leaf

Place the roast and vegetables into the bottom of a crock pot. Add the rest of the ingredients and cook for 8 hours on low or 4 hours on high. Remove the bay leaf, shred and enjoy!

Tip: Serve over rolls with a mild white cheese and broil for about 20 seconds or until browned.

Homemade Crock Pot Italian Beef

Fresh recipes are fun but nailing new recipes on the first try- now that’s the best!

These crock pot Italian beefs are packed full of flavor and once you have the ingredients together, they cook themselves. This makes dinner not only delicious but easy too.

Crock Pot Italian Beef

  • 1 1/2 pound chuck roastIMG_20160827_182022
  • 1 cup beef stock
  • 1 onion, sliced

Crispy Chicken Wings With Spicy Buffalo Sauce, Garlic Sauce and Orange Chicken Sauce (Paleo)

Happy National Chicken Wing Day! To celebrate, use my Crispy Chicken Wings  recipe to bake your wings to perfection and add one of my favorite sauces to finish them off!

  • 10 chicken wings
  • 1 tablespoon baking powder
  • 1/2 tsp salt

Preheat the oven to 250 degrees and cover a cookie sheet with aluminum foil. Place a metal drying rack on the baking sheet.

Combine ingredients in a plastic bag or mixing bowl and make sure that all the chicken is well coated with the mixture. Cook in the oven for 30 minutes.

Take the wings out of the oven and raise the temperature to 425. Cook an additional 40-50 minutes in the oven.

Coat the wings in your favorite sauce and enjoy!

Buffalo Chicken Sauce

  • 2 tablespoons cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon chili pepper
  • 1 tablespoon apple cider vinegar
  • 5 tablespoons water

Make sure to thoroughly combine the ingredients (to disperse the cayenne pepper) in a large bowl. Coat your wings and serve.

Garlic Sauce

  • 20 cloves of garlic
  • 3 tablespoons olive oil
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 3 tablespoons butter

Completely de skin and peel the garlic, place into an oven safe container and add your olive oil, salt and pepper. Bake in the oven, covered with aluminum foil, at 325 for about an hour or until the garlic is roasted and soft in texture.

Take out of the oven and mash up the garlic mixture with a fork. Add in the butter, combine with the wings and serve.

Orange Chicken Sauce

  • 5 tablespoons orange juice
  • 1 tablespoons honey
  • ¼ teaspoon ground ginger powder
  • ¼ teaspoon cayenne
  • ½ teaspoon apple cider vinegar
  • ⅛ teaspoon sesame oil
  • ½ teaspoon ground garlic powder
  • 2-3 tablespoons sesame seeds

Mix the ingredients in a bowl until well incorporated. Toss the wings in the sauce bowl and serve.

Chicken wings are easy and so versatile. With endless flavors and even more dipping options, they can’t be beat.

Sweet Potato Sloppy Joe Sliders (Paleo)

Spice filled Sloppy Joes are so flavorful and easy to make. Swap the bun for baked sweet potato slices and enjoy my take on traditional Sloppy Joes.

4 Reasons You Should Add Spice To Your Life

Cayenne pepper, most commonly used in its powdered form, is a very spicy addition to any meal. On the Scoville Scale (the scale that rates the potency – spicy heat – of peppers) cayenne pepper rates in the middle at 30,000-50,000 heat units.

Native Americans have used cayenne pepper in their food and medicines for over 9000 years. I prefer cayenne to other hot sauce types, as it has a kind of heat that enhances flavor without sacrificing taste.

1. Cayenne Pepper contains vitamins E, C, A, and B6, potassium, riboflavin, and manganese.

2. Cayenne Pepper is full of capsaicin. Various health benefits are attributed to the capsaicin found in cayenne peppers such as cinching your waistline. It can also be used topically for pain relief.

3. Cayenne Pepper helps produce saliva.
Having the correct amount of saliva is important to digestion and maintaining oral health.

4. Including cayenne pepper into your meals, especially breakfast, lessens your appetite throughout the entire day. Boost your metabolism and burn excess fat by consuming it daily.

 

A little cayenne pepper packs a lot of heat in recipes and even more in sauces. Adding this spice to your meals is very easy and surprisingly delicious.

Cheesy Eggs

Start your day with eggs! Eggs are full of protein and mine have a little extra “kick” that is sure to give your morning an added boost. 20160528_111030 (1)

 

7 eggs, scrambled

1 cup sharp cheddar cheese, shredded

¼ teaspoon cayenne pepper

1 tablespoon butter

 

Scramble your eggs in a bowl and add the cheese and cayenne. Mix well.

Add butter to a frying pan on low to medium heat, pour in egg mixture and cook slowly to texture of preference.

Orange Chicken

My take on orange chicken is sweet with a hint of spice and just delicious!

1 tablespoon olive oil

4 chicken thighs, diced

———————-

1 cup orange juice

3 heaping tablespoons honey

¼ teaspoon ground ginger powder

¼ teaspoon cayenne

½ teaspoon apple cider vinegar

⅛ teaspoon sesame oil

½ teaspoon ground garlic powder

Place diced chicken and tablespoon olive oil  in a frying pan and heat on medium until white and fully cooked, or about 10 minutes.

Mix the rest of the ingredients in a bowl until well incorporated and add to the pan. Cook about 20 minutes on medium until the sauce has thickened and serve with a side of rice and your favorite vegetable!
