I Love to Travel: Just a Long Weekend at a Mexican Resort

It was Friday April 13th and we were on our way to Mexico together for the first time. Well, I guess that’s not entirely true.

Back in February we went on a cruise and one of the stops was in Cozumel.

But this time we were on our way to Cancun. We were headed to our cozy, chill all-

inclusive resort and we couldn’t wait.

Our preplanned transportation service was perfect, picked us up from the airport as scheduled and brought us right to the front door of Sunset Marina. We had arrived.

First things first, some relaxing and drinks on the water. The water was pretty tame

 

as we stayed on the bay side in Cancun.

Saturday we had planned our excursion to one of seven wonders of the world, Chichen Itza! This site has Mayan ruins and they are truly grand and amazing to encounter.

It was a steamy 96 degrees as we walked around Mexico that day, so I couldn’t wait to go the the cenote, or sink hole, in Spanish. I heard it was “cold,” fresh water and 150 feet deep, and I was so excited!

I was literally the only one though, no one else in my group went in, not even my husband! Where are my friends when I need them?

It was super fun though and perfectly refreshing for how hot I had been earlier in the day. I love cenotes!

That night we visited the resort restaurant for French Cuisine. The restaurant had

different styles of food, depending on the day. The food was good and because we had all-inclusive access, everything was “free.”

On that note, I don’t think there was anything I said more on that trip then “Dos cientos ocho y A (ah),” our room number, haha, we used it for everything!

Sunday morning started with talking with our vacation company. We got to tour Tres Rios Resort and it was beautiful and sustainable and I loved it. However, we didn’t buy anything, this time. By Sunday afternoon we wanted to get back to the pool and relax but it had been raining all day, so instead we hopped in the hot tub to watch the sunset. The hot tub was right on the water so you were sitting on the bay, the sun and sky were so close!

Monday was our last day so we wanted to spend it at the pool. Along with the excursions we went on, we had massages as well and because we talked with or vacation company, all of these activities were comped.

while. The massages were great, relaxing and renewing. We went back to the pool and played a quick round of bingo before late lunch/first dinner. To get an extra number to add to your card, someone had to name the only animal with three brains. And guess who knew it? Yup, this girl! Octopus! I win.

Not really, but I did get an extra number for knowing that fun fact. After that, we grabbed so buffet food and went back to the pool before dinner. I even went down the water slide.

had had yet in Mexico, Chicken, Wine and Garlic Rice. It was absolutely delicious. We enjoyed many Mexican dishes while we were there but this Spanish dish was just delectable.

Tuesday morning came really fast and because of our scheduled transportation, we spent a long three hours at the airport before take off. Snooze, literally.

And then we were back. Cancun was fun and I would love to visit again. This was not a typical long weekend for us but it was really fun!

Chicken and Vegetables with Red Curry and Coconut Milk Sauce

Do you ever make a recipe you love, but then you kinda forget about it and don’t make it again for a while? That was this recipe for me.

My husband was the first to make this Chicken Curry dish and I loved it so much. After what we made was gone, I made the recipe again that week, because it was so good.  It was my new fave. But..then it wasn’t? I forgot about it!

Then, I thought of this recipe, for some reason on the way back from our Mexico trip, and I just had to have it. This time, I put my own spin on the recipe, including throwing it all in the crock pot, and it came out great. It was so good, I had my leftovers for breakfast.

Chicken and Vegetables with Red Curry and Coconut Milk Sauce

  • 1 pound ready-made gluten-free and soy-free chicken stripsChicken and Vegetables with Red Curry and Coconut Milk Sauce
  • 2 red bell peppers, sliced
  • 1 white onion, sliced
  • 3 cloves garlic, chopped
  • 8 mushrooms, washed and sliced
  • 1 can coconut milk
  • 1 1/2 cups chicken stock
  • 3 tablespoons Thai Red Curry
  • 1 teaspoon ginger powder

Add everything to the crock pot and let cook on high for 4 hours or low for 8. Serve it with cauliflower rice to keep the dish Paleo. Otherwise you could serve with rice, rice noodles or as a side to potatoes and a vegetable.

Our First Cruise, and Why I’m so Excited

When you’re living in a touristy, beach town like Delray Beach, FL, you really have to take in everything that’s around you. When Nick and I first moved here, there were so many new and fun things to do and places to visit. We were always on Groupon looking for fun adventures, wine and beer tastings, and things to do for day trips.

It’s over two years later, and we’ve done a lot. Parks were walked in, drinks were had, IMG_20160814_103155and exploring was done. One of my favorite things was Devil’s Millhopper State Park. I loved that it was a hilly hike and the different views (from forest to rainforest) you got to see on your way down into the sink hole.

There are some things we knew we wanted to do before leaving South Florida, that we haven’t yet done, and a cruise was one of them. Neither of us have ever been on a cruise and I am definitely so excited.

Why I’m Most Excited

This is the thing though, and I know it will make you laugh. The number one, most exciting cruise thing I cannot wait for is the complimentary room service! And probably not for what you’d expect. I want to have a fresh fruit plate in my room at all times, HAHA. (But so serious.)

Isn’t that the best? Totally me though. Of course I have already thought of and “planned out” what to have and such for wellness purposes. Because, well you know me. Anyhow, beyond my excitement for a constant fruit plate, there are so many things I look forward to!

The Best Parts

  • our first stop is Key West, another Florida must see that’s on our list
  • I can only imagine the gym is amazing, sprawling and state of the art- Yay!
  • Our last stop is Cozumel, Mexico and Nick told me he wants to hike the ruins, double- Yay!
  • since it’s our first, I’m glad the cruise is only four days, in case we don’t like it (js)
  • According to what I read, there are comedy shows, stage shows, a rum bar, a tequila bar and a DJ to top it all off

If these aren’t enough reasons to be excited, we are also staying in an ocean view room. How gorgeous will that be?!?

25 Things You Don’t Know About Me

It’s so healthy for you and acts as a natural antibiotic. I use it daily in cooking and cannot get enough.

2. I am a clean freak.

I always leave my house staged and detest clutter.

3. I am the worst singer ever.

Though I sing, in ridiculous tones, to my husband daily. Everything from Happy Birthday to renditions of Christmas songs with my own made up lyrics.

4. I once got lost in Mexico.

I was walking around one day alone and realized I was lost, with no phone number or address to find my way. I remember a huge yellow building that was at the end of the street my host family lived on and found my way before dark. Phew!

5. I love lilacs.

My future house will have light purple, dark purple and white lilacs. Lilacs are my idea of the first official sign of summer

6. Fireworks are my most favorite thing and therefore the 4th of July is my favorite holiday. 

7. In college, I used to call into radio stations to contribute to the morning talk shows.

8. I love Spanish.

And everything about it. The food, culture, music and language are amazing.

9. I moved to Panama for 5 months with my boyfriend (now husband) in the winter 2013, which happened to be one of the worst winters in WI since we have been alive.

10. I have watched children professionally for over 20 years, that is ⅔ of my life that I have spent with other people’s children!

11. I love to play

I love to play games and with toys and on playgrounds, especially swinging. I think this is why I so enjoy my time with kids.

12. I am a girly girl.

I love to paint my nails, dress up and and my nails and hair.

13. I am a tomboy too.

I grew up fishing, camping, hiking and generally outside. I still love all of these activities

14. I am obsessed with the show Dawson’s Creek.

I literally watch the entirety of all 6 seasons a couple times a year, and this started several years ago. Meaning I have watched it through 5+ times. (I am currently in the middle of season 5.)

15. I make my own wine.

I would love to do it up big and mass produce my own brand with labels and flavors and all, but for now it is just for me and my peps.

16. To-Do lists are my thing

I make them for everything, everyday. There is no better satisfaction then checking off tasks after I accomplish them.

17. I like all music except for Scream-O. You know, where you can’t hear the words just a lot of shrill screaming? Ya, I don’t like that.

18. I would walk everywhere if I could.

I love to go walking, whether it is my first time exploring a place or if I got there as often as I can. I always try to carry something when I walk because my fingers swell terribly:/

19.Don’t touch my face, ever. Just don’t. 

20. My eyes are human levels. 

If something is hanging crooked, I have to fix it. Even in public,  it bothers me and my husband teases me about it.

21. I am not a huge sports fan.

But I love baseball. I am a Milwaukee Brewers fanatic.

22. I am short.

I have a very short torso but my legs are long and the same length as friends that are 3-4 inches taller than myself.

23. I have very waxy ears.

I have to clean them out daily and hate to wear earbuds because I am always battling my incessant earwax.

24.Deep fried oreo’s are my most favorite indulgence. They are beyond delicious

25. I experienced love at first site.

I don’t even know if love at first site is as thing, all I know is I knew I loved my husband before I even met him and from the very first second, I knew that he was the one I wanted to spend my days with.
