Strawberry Vanilla Chia Pudding

Nick loves chia pudding. And chia pudding is quick, easy, healthy, and a great dish to have on hand. So we have it a lot and I am always trying new combos.

This is my newest version and according to him, it’s a winner, too. Make this quick so you can get some of the last of the summer strawberries to add in. Yum!

Strawberry Vanilla Chia Puddingstraw van chia pudding

  • 2 cups vanilla almond milk
  • 1/2 cup chia seeds
  • 1/2 teaspoon vanilla
  • 1 cup strawberries, sliced
  • 2 tablespoons maple syrup

Combine all the ingredients and let chill in the fridge for 5 hours or overnight. (Stir a couple of times in the first couple of hours to make sure that everything is combined.)

How-To: Perfectly Grilled Sweet Corn

The summer is almost gone, but wait! If you’re in WI, you can still get fresh, local sweet corn, and have a summer meal, even now=)

I love to grill sweet corn, it’s the best. It’s super easy, too. Just soak it, grill it, shuck it, and eat it. Here’s how:

  • 4-6 sweet corn
  • 2 gallons of water (or until the corn is completely submerged)
  • 1 large roasting pan (for soaking)

Place the corn, full husk, into a roasting pan and fill the IMG_20180830_133456pan with water. Soak for an hour or as long as you can.

Light your grill (gas or charcoal,) shake off any access water and grill the corn until the husks are burnt and black, or about 20 minutes.

Husk and eat with lots of butter (or Vegan substitute,) salt and pepper! For me, make some BBQ chicken and you’ve got the perfect summer IMG_20180830_201024meal.

Chocolate Coconut Pecan Chia Pudding

I love chia pudding. It takes next to no time to prep and then all you have to do is chill it in the fridge. How easy is that?

This flavor combines chocolate, nuts, and coconut. Yum. And this recipe has been friend-tested, and they loved it!

  • 1/2 cup coconut shreds
  • 1/2 cup pecans, diced

Red, White, and Blue, With Lemonade, Too!

Who loves lemonade? I do! I love limeade, too. But there’s something about lemonade!

Lemonade tastes so bright, it’s like your drinking in summer. It’s refreshing and delicious and one of my all time favorite summer drinks! Speaking of all time favorites, Happy 4th of July! Well, almost, tomorrow!

The 4th of July is hands down my favorite holiday. Why? Fireworks, that’s why. This is our last 4th on the beach in FL and hot as it is, the fireworks show is amazing! Because you’re on the coast, you can see up to five fireworks shows at once! The coolest.

Fireworks are my favorite! The way the gold ones drape and fall like an elegant chandelier is so beautiful and the grand finale is like the celebration of all things fireworks!  Anyhow..

back to lemonade.

This recipe is tart and crisp with a sweetness, and berries, too! This 4th of July lemonade is perfect for your festive celebrations and everyone will love it!

  • 5 cups cold water
  • 1 standard-sized tray of ice cubes
  • 4 lemons, juiced
  • 1/4 cup sugar
  • 1 cup blueberries
  • 1 cup strawberries, sliced

Stir together with whisk, dissolving the sugar. Add the blueberries and strawberries and enjoy!

Homemade Berry Sorbet

Summer is coming and so are all the yummies that make your summer so delicious! This sorbet is the easiest and yummiest cold summer treat.

And it is the easiest ever! Just combine frozen fruit, OJ, and blend. Yum!

  • 2 cups frozen mixed berries
  • 2 cups OJ

Blend until smooth and serve immediately. You could also add more liquid for a smoothie or add protein and make it a protein shake. Yum!

Coconut Chocolate Chia Pudding

Chia pudding is a weekly staple in my house. My hubby, Nick, loves my Cinnamon Raisin Chia Pudding and eats it as dessert, breakfast, and sometimes even as a snack

I love to try new versions of stuff we like. Nick doesn’t like or eat chocolate, so he won’t like this new version, but I love it and you will, too!

I’m not your typical chocolate lover but as a flavor combination, coconut and chocolate is so good! Let me know what you think=)

Coconut Chocolate Chia Puddingchoc coco pud

  • 2 cups vanilla almond milk
  • 1/2 cup chia seeds
  • 1/2 teaspoon vanilla
  • 1/2 cup coconut shreds
  • 1/2 cup mini chocolate chips (I use Enjoy Life brand because it’s dairy-free.)
  • 2 tablespoons maple syrup
  • 1/8  teaspoon cinnamon

Combine all the ingredients and let chill in the fridge for 5 hours or overnight. (Stir a couple of times in the first couple of hours to make sure that everything is combined.)
