Gluten-Free Cinnamon French Toast

I can’t cook for just two people, like I literally CAN’T. I love to cook. I like to cook huge meals with lots of leftovers. And when I try to cook for just two, I always have enough for at least four.

But since going on the road, I needed to figure it out. And in a short amount of time, I’ve really gotten better! I’m buying less but prepping more and thinking about ingredient specific meals before even going to the store. #learning

My Gluten-Free Cinnamon French Toast was a great recipe to do for just two people and not make extras. (But truth be told, if we were going to be in this AirBnb longer than 2 more days, I would have batch cooked these, too, and had several breakfasts for the week.)

Gluten-Free Cinnamon French Toast

  • 2 eggs, scrambledcinnamon french toast
  • 3-4 shakes cinnamon
  • 2 tablespoons vanilla almond milk
  • butter and maple syrup

Scramble the eggs in a shallow dish. Add the cinnamon and Almond milk and stir until incorporated.  Heat a skillet to low-medium heat and add 2 tablespoons butter. When the butter is melted, submerge the bread into the egg mixture and add the bread slices to the pan. Cook on each side until they begin to brown or to preference.

Top with butter and maple syrup and enjoy. Mmm.

I’m typically not a fan of sweet breakfast but when I do have sweeter things in the AM, they are always simple and delicious like this. I hope you love these as much as me!

Tip: If you like crispier french toast, quickly dip the bread into the egg mixture. For a “wetter” and less crunchy piece, submerge and let sit in the egg mixture for 15 seconds.

Strawberry Banana Protein Shake

Another day, another protein shake. And yum.

This classic combination is light and fresh. Bag frozen strawberries and banana chunks together as meal prep. This way, you can just dump it in and save a step!

Strawberry Banana Protein Shake

  • 1/2 cup vanilla almond milkIMG_20180802_090224
  • 1/2 cup water
  • 1 cup frozen strawberries
  • 1 banana
  • 1 tablespoon chia seeds
  • 1 serving protein powder

Gluten-Free Ham, Egg, and Cheese Souffle

This recipe is a version of my Gluten-Free Sausage Egg Souffle but with ham and two different kinds of cheeses instead. I love how easy this dish is to put together and how homemade and wholesome it tastes.

And using cubed ham cuts your cook time down on this recipe, because it’s ready to add to the dish, you don’t have to cook it at all! So just combine everything, throw it in the oven, and in about an hour, you will have a delicious piece of breakfast to enjoy.

Gluten-Free Ham, Egg, and Cheese Souffle

  • 1 pound cubed ham IMG_20180729_120349.jpg
  • 6 pieces of Gluten-Free bread, cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup medium cheddar cheese, shredded
  • 8 eggs, whisked
  • 1/4 cup almond milk
  • 1 teaspoon yellow mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • butter to grease the pan

Cube the bread into dice-sized pieces and shred the cheddar cheese. Whisk the eggs, milk, mustard, salt, and pepper together.

Heat the oven to 350 degrees. Grease a 9×9 pan with butter and put 1/3 of the ham into the bottom of the pan. Continue layering with 1/3 of the bread and 1/3 cheese. Layer until finished and pour the egg mixture evenly over the top. Cover with foil and put into the oven.

Homemade Breakfast Sausage Patties

Breakfast foods are so good, no matter when you eat them! And you know me, I just love anything homemade. These came together so quickly and cooked up fast, too. These Homemade Breakfast Sausage Patties have just a couple spices in them and a great flavor!

  • 1 pound pork sausage
  • a pinch of red pepper flakes
  • a pinch of salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon brown sugar
  • 1/4 teaspoon powdered sage
  • 1 tablespoon avocado oil

Mix everything together (besides the oil) and form into circular rounds. Add the avocado oil to a skillet on medium heat and cook for about 5 minutes per side until browned.

Makes 8-10 patties

Banana Pecan Pancakes

It’s been rainy here and I am LOVING it?!? Am I the only one that loves cold, rainy weather? While it doesn’t get cold down here, it is def gray and rainy and for me, that makes me think of home. And at home, usually if it’s rainy, it’s cold, too.

Anyhow, I made these pancakes and fell in love with them. And I generally don’t even love pancakes. But Nick does, and since I liked these too, you will for sure!   Top them with extra nuts and make a double batch so that you have some all week! Yum!ban pecan pan

Banana Pecan Pancakes 

  • 1 medium banana, peeled
  • 3 whole eggs
  • 1 tsp vanilla
  • 2 tablespoons almond butter
  • 1 tsp cinnamon
  • 1 cup almond flour
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/4 cup broken pecan pieces
  • coconut oil for cooking

Add banana to a medium-sized bowl and smash it. Next add the eggs and mix with the mashed banana until it is well incorporated. Mix in the remaining ingredients excluding the coconut oil.

Into a skillet on medium heat add coconut oil. Pour small pancakes, about 4 per pan, and cook until the begin to bubble and flip, about 4 minutes per side. Use the rest of the oil for the batches of pancakes until you are finished cooking.

Bacon and Turkey Omelette

This breakfast has so much flavor and is really quick and easy to throw together. Plus, it makes enough for two people or two meals, so it’s awesome to have if you’re busy, like me!

  • 4 strips bacon
  • 1/2 red onion, chopped
  • 1/2 red pepper, chopped
  • 1 tablespoon Mrs. Dash Original Blend
  • 3 pieces of low-sodium, steroid-free, antibiotic-free baked deli turkey, broken up
  •  4 eggs, scrambled
  • 1/2 teaspoon pepper
  • 1 pinch of salt

Cook the bacon to crisp in a medium skillet on medium heat. Remove the bacon from the pan and set aside.  Don’t dump out the grease! Add the vegetables to the pan (with the grease in it) and cook for 5 minutes. Add the seasonings and turkey pieces. Stir and cook for 3 minutes. Add the eggs to the pan and cook to done or about 5 minutes.

Eggs and Sweet Potato Hash

If you’ve been following me for a while, you know that I don’t love to eat breakfast. But you also know, that I am eating breakfast these days, for the health of it. And this, THIS, has become a weekly favorite.

Grated sweet potatoes, a couple of spices, and eggs is all you need for this super easy, delicious and healthy breakfast.  It’s so good!

Eggs and Sweet Potato Hash

  • 2 tablespoon avocado oilIMG_20180223_082207
  • 2 large or 3 small sweet potatoes, peeled and julienned/shredded
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon chili powder
  • 3 or 4 eggs
  • green onions (optional)

In a cast iron (or not, I just love cast iron) skillet, heat on medium and add the avocado oil. In a food processor or with a cheese grater, turn the sweet potatoes into hash browns. Add the potatoes to the hot oil in one layer. Next, add the spices. Do NOT stir! Let heat about 5 minutes, without touching the potatoes (except to lift slightly with a spatula to test for doneness.)

Flip the potatoes and brown the other side, about 5 minutes. Then stir them and finally, create circular spaces for your eggs. Crack the eggs into the “holes” and let cook. I like runny eggs with this recipe, but you could do scrambled if you prefer. Cook until the eggs are done and serve.

This meal takes a little prep work but it is so delicious and it warms up well, too. Yum!

Chipotle Egg Casserole with Red Pepper and Gouda

Eggs and vegetables are such a great start to the day. Whether you like breakfast at 8am or 11am, this casserole is the perfect fit.

Chipolte Egg Casserole is stuffed with veggies, has bacon and gouda, and is prepped and ready to pop into the oven in just minutes.

Chipotle Egg Casserole with Red Pepper and Gouda

  • 8 eggs, scrambledIMG_20180102_120551
  • 5 strips bacon, cooked and crumbled
  • 1/2 red bell pepper, chopped
  • 1/2 onion, chopped
  • 1/2 cup gouda cheese, shredded
  • 1 tablespoon Chipotle seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons bacon grease

Cover the bottom and sides of a 9X9 pan with the bacon grease and heat the oven to 350 degrees. In a separate bowl, whisk to scramble the eggs. Pour into the baking pan.

Add the onion, red pepper, and bacon and stir. Sprinkle in the cheese. Finish by adding the seasonings and stirring to combine. Pour into your baking dish and bake in the oven for 30 minutes. Enjoy!
