Strawberry Banana Protein Shake

Another day, another protein shake. And yum.

This classic combination is light and fresh. Bag frozen strawberries and banana chunks together as meal prep. This way, you can just dump it in and save a step!

Strawberry Banana Protein Shake

  • 1/2 cup vanilla almond milkIMG_20180802_090224
  • 1/2 cup water
  • 1 cup frozen strawberries
  • 1 banana
  • 1 tablespoon chia seeds
  • 1 serving protein powder

Four Citrus Blend

It’s summer, I’m back home for another couple months, and I AM LOVING IT! The nights cool off and you can cuddle with a blanket, and the days warm up and the sun shines bright. And sometimes there is a thunder storm during the day! It’s the best, you just can’t beat it.

I love the feels of summer, and I also love the smells. Who’s with me? This blend is all summer and combines four citruses for a light, bright summer-fresh scent. Try it out and let me know what you think!

  • 4 drops Lemon
  • 4 drops Lime
  • 4 drops Grapefruit
  • 4 drops Orange

Add these oils to a diffuser, add water, and start it! This is such a perf blend for the summer!

Gluten-Free Ham, Egg, and Cheese Souffle

This recipe is a version of my Gluten-Free Sausage Egg Souffle but with ham and two different kinds of cheeses instead. I love how easy this dish is to put together and how homemade and wholesome it tastes.

And using cubed ham cuts your cook time down on this recipe, because it’s ready to add to the dish, you don’t have to cook it at all! So just combine everything, throw it in the oven, and in about an hour, you will have a delicious piece of breakfast to enjoy.

Gluten-Free Ham, Egg, and Cheese Souffle

  • 1 pound cubed ham IMG_20180729_120349.jpg
  • 6 pieces of Gluten-Free bread, cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup medium cheddar cheese, shredded
  • 8 eggs, whisked
  • 1/4 cup almond milk
  • 1 teaspoon yellow mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • butter to grease the pan

Cube the bread into dice-sized pieces and shred the cheddar cheese. Whisk the eggs, milk, mustard, salt, and pepper together.

Heat the oven to 350 degrees. Grease a 9×9 pan with butter and put 1/3 of the ham into the bottom of the pan. Continue layering with 1/3 of the bread and 1/3 cheese. Layer until finished and pour the egg mixture evenly over the top. Cover with foil and put into the oven.

Chocolate Coconut Pecan Chia Pudding

I love chia pudding. It takes next to no time to prep and then all you have to do is chill it in the fridge. How easy is that?

This flavor combines chocolate, nuts, and coconut. Yum. And this recipe has been friend-tested, and they loved it!

  • 2 cups chocolate almond milk
  • 1/2 cup chia seeds
  • 1/2 cup coconut shreds
  • 1/2 cup pecans, diced

Combine all the ingredients and let chill in the fridge for 5 hours or overnight. (Stir a couple of times in the first couple of hours to make sure that everything is combined.)

We’re Going On An Adventure

Otherwise known as our life. And we leave in less than two weeks! (Actually move from our apartment in South Florida to become gypsies, digital nomads, or like I like to call it, Airbnb’ers!)

I can hardly believe it. What once was a thought of, talked through, pipe dream is fast becoming our reality, and I cannot wait to tell you about it.

First things first, a little about my story. My hubby and I are anything but traditional. We moved and lived to Panama for 6 months early in our dating life. We came back and got married on the sly. And then, once we were back (home,) Nick found himself his dream job and we left and moved to Florida.

And today, we are coming up on almost three (HOT) years in Florida. It’s really crazy how fast it went. Wow.

And now, we’re on to the next!

We plan to spend most of August and September back home (in Wisconsin,) almost all of October traveling, November back here in the Florida life and by Christmas we will be to my mom and step dad’s in Arizona. Whew!

From there, we plan to spend most of  2019 on the west coast. We have lots of love for California, Washington and Oregon, and are excited to visit new states and areas, too!

The end of this year will go fast and there are so many things I am looking forward to. A Brewer’s game back home, seeing friends and family, walking on the lake path in Lake Geneva and my favorite egg rolls ever are just the beginning.

Maybe I should back up and preface all of this with, both my husband and I have the ability to work remotely. Travel and seeing the nation (and the world!) is on both of our hearts and with the remote work option, neither of us can say exactly where we want to live “forever” or where we want to be even for now. We want to see, and be, in it all!

We talked about this life, this dream, this possibility..all the way back when we lived in Panama. Truly, that feels like a long time ago. It’s crazy how much time has passed, how many things have changed, and all that has happened to us in the last five years.

And now, we both are in completely new professions that hold our passions and allow us to live out our other passions, too, like spending time with our people and traveling. old-1130743_1920

Life has not always been easy and sometimes, it still isn’t. But things happen and you have to be flexible, and be as positive and patient as you can!

I am so excited. It’s hard to believe. But for now, I must go. I need to pack my life, my place, and my suitcase! (We’re off to Vancouver Canada at the end of this week for 10 days,) and we move three days after coming back. Oy! Oh yes, and don’t forget about that work life, too!

Thanks for reading and do me a favor and put in a prayer for us! Life may not have turned out like we “wanted it to,” or even how we thought it would. But that doesn’t mean it hasn’t turned our exactly how it was supposed to.

I can’t wait to share this journey with you and all of my continued love for natural everything, delicious food, God, workouts, friends and family, travel and everything else Emmy!

Homemade Breakfast Sausage Patties

Breakfast foods are so good, no matter when you eat them! And you know me, I just love anything homemade. These came together so quickly and cooked up fast, too. These Homemade Breakfast Sausage Patties have just a couple spices in them and a great flavor!

  • 1 pound pork sausage
  • a pinch of red pepper flakes
  • a pinch of salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon brown sugar
  • 1/4 teaspoon powdered sage
  • 1 tablespoon avocado oil

Mix everything together (besides the oil) and form into circular rounds. Add the avocado oil to a skillet on medium heat and cook for about 5 minutes per side until browned.

Makes 8-10 patties

Red, White, and Blue, With Lemonade, Too!

Who loves lemonade? I do! I love limeade, too. But there’s something about lemonade!

Lemonade tastes so bright, it’s like your drinking in summer. It’s refreshing and delicious and one of my all time favorite summer drinks! Speaking of all time favorites, Happy 4th of July! Well, almost, tomorrow!

The 4th of July is hands down my favorite holiday. Why? Fireworks, that’s why. This is our last 4th on the beach in FL and hot as it is, the fireworks show is amazing! Because you’re on the coast, you can see up to five fireworks shows at once! The coolest.

Fireworks are my favorite! The way the gold ones drape and fall like an elegant chandelier is so beautiful and the grand finale is like the celebration of all things fireworks!  Anyhow..

back to lemonade.

This recipe is tart and crisp with a sweetness, and berries, too! This 4th of July lemonade is perfect for your festive celebrations and everyone will love it!

  • 5 cups cold water
  • 1 standard-sized tray of ice cubes
  • 4 lemons, juiced
  • 1/4 cup sugar
  • 1 cup blueberries
  • 1 cup strawberries, sliced

Stir together with whisk, dissolving the sugar. Add the blueberries and strawberries and enjoy!

Triple Berry Crisp Protein Shake

Are you a breakfast eater? I really try to be but it’s just not my favorite. Actually, I love breakfast food, but I will just have breakfast for dinner if I miss it. HAHA.

So when I do eat breakfast, it’s sometimes leftovers (maybe even dinner LOL) and other times, a protein shake. You never know with me.

But yummmmmm. I cannot get over how delicious this is! The berries combine with oats, cinnamon, and almond milk and it tastes like a cold, liquid berry crisp.

  • 1 cup frozen mixed berries (I like strawberries, raspberries and blueberries)
  • 1 cup vanilla almond milk
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon powder
  • 1/4 cup gluten-free oats
  • 1 scoop vanilla protein powder

Just blend together and serve. Mmm, so good. How often are you enjoying protein shakes?

You Are Going To Love This Veggie Pasta

Wait!

This is NOT veggies, spiraled, claiming to be pasta.  There IS pasta in this dish. And..there are veggies that are spiraled and sliced, too.

The thing is… I.love.pasta. I love all the things you can add to pasta. Protein and sauce and cheese, oh my! It takes me right back to my Midwestern roots. Meat, starch and cheese LOL.

Anyhow, this pasta dish has pasta, zucchini that has been zoodled, and onions that have been sliced. This way, you get more flavor, a little bit of color, and an all around healthier dish.

Veggie Pastaveg noodles

  • 2 tablespoons avocado oil
  • 1 red onion, sliced
  • 1 yellow onion, sliced
  • 2 zucchinis, zoodled or cut into long, thin strips
  • a quarter-sized diameter of gluten-free spaghetti

Boil the noodles per package directions.

In a separate skillet, add the oil and the onions. On medium heat, cook bout 5 minutes. Remove the onion and set aside. Add the zucchini into the skillet and cook for about 3 minutes or until slightly softened. One the zucchini is done salt and pepper it and add the onions and pasta. It’s done!

You can top this with a cheese sauce, spaghetti sauce, garlic, and so much more! Yum!

Essential Oils: Focus Blend

What do you do to help you focus? As a freelance writer, I have to stay on task  when I work. So, I have lots of tips and tricks I’ve developed along the way.

Taking several quick, short walks throughout the day is amazing for focus. I do this often. I also like to stand while I work sometimes. This is great for your body and allows you to move more.

And I love to use essential oils to help me focus, too! I find that bright, fresh citrus is great for focus and this blend smells amazing.

Focus BlendPeppermintoil

  • 2 drops peppermint oil
  • 2 drops lime oil
  • 2  drops grapefruit oil

This blend is awesome in a diffuser. Just add the oils and water and set your diffuser next to you for your task, and boom. Smells great, keeps you alert, and helps you focus.

If you want to make a roller bottle with this blend, add 15 drops of each into the roller bottle and fill with Jojoba oil (or carrier oil of choice.)
