Bacon And Brussel Sprouts (Paleo)

You have to try these brussels sprouts. Because bacon. This recipe is a great addition to any meal of the day. With just two ingredients, Bacon And Brussels Sprouts is deliciously crispy and soon to be your favorite!

  • 4 slices bacon, fried
  • 3 cups of brussels sprouts, ends cut off and quartered

Fry bacon on medium heat while flipping throughout, until preferred crispiness. Take bacon out and set aside. Do not drain the grease from the pan!

Cut the ends off of the brussels sprouts and then cut in quarters, or so that all the brussels pieces are about equal size. Add them into the pan you fried the bacon in and cook the brussels sprouts with the grease.

Cook until warmed through (or a little extra if you like them crispy) and serve hot.

Tip: When you take the bacon out, lay it on a paper towel and dab off the excess grease.

These Two Ingredient Apple Chips Are Def Your New Favorite Snack

This treat tastes like Fall, in a bite-sized package.  Tote-able, natural, and deliciously sweet, these dehydrated apples are the best.

  • 5 red delicious apples, cored and sliced
  • 2 tablespoons orange juice

Core and evenly slice the apples. In a medium bowl, add in two tablespoons of orange juice and toss the apples to coat them.

-Using a dehydrator, lay the slices on trays and dehydrate for 6 hours or until the slices become crispy chips.

20161023_110856-Using an oven, lay slices on a foil lined baking sheet and bakes at 200 degrees for 2-3 hours or until preferred texture.

Banana Bread Pancakes With A Cinnamon Maple Yogurt Drizzle

On a chilly morning, warm fresh banana bread pancakes are the best. These pancakes are light, fluffy and filled with banana bread flavor! Top them with this one of a kind syrup and enjoy.

Banana Bread Pancakes

  • 3 bananas, mashed
  • 1/2 teaspoon vanilla
  • 1 cup milk
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup regular flour
  • 1/2 cup whole wheat flour (you can use a full cup of either or, I just like the mixture)
  • 1 1/2 teaspoons cinnamon
  • 2/3 cups walnuts, chopped (optional)
  • 1 tablespoon butter or oil (for each pan of pancakes)

Mash the three bananas until soft and easily stirred. Add in vanilla, milk, egg and combine. Next is the baking powder and soda, both (or either) flours and cinnamon. Stir until all the ingredients are incorporated. Add nuts last and stir.

Cook over medium to low heat until bubbles begin to form on one side and flip, or about 5 minutes on each side.

Tip: Use 1 full tablespoon butter/oil to cook your pancakes and help them not stick.

  • 2 heaping tablespoons Greek yogurt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • 1/3 cup maple syrup

Combine ingredients in a small bowl until smooth and well mixed.

Hurricane Matthew is here! Or will be tonight. Our ice maker has been working overtime and that’s just the start. Between the news, social media and the people in the street, there’s no shortage of tips and tricks to get you through this storm.

And here is one final tip- make these “cookies.” Packed with oats, bananas and peanut butter, these are full of nutrition and don’t have to be kept refrigerated. Good luck and stay safe!

  • 3 bananas
  • 2 cups old fashioned oats
  • 1 scoop protein powder (I use vanilla)
  • 1 cup peanut butter
  • 1/2 cup honey
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Mash the bananas to start. Then add in the rest of the ingredients and mix together. Cover a baking sheet with foil and place spoonfuls of cookies on it. Cook for about 15 minutes on 350 or until the edges begin to brown.

Tip: Add chocolate chunks or butterscotch chips to this base recipe to make it yours.

 

 

Homemade Crock Pot Italian Beef

Fresh recipes are fun but nailing new recipes on the first try- now that’s the best!

These crock pot Italian beefs are packed full of flavor and once you have the ingredients together, they cook themselves. This makes dinner not only delicious but easy too.

Crock Pot Italian Beef

  • 1 1/2 pound chuck roastIMG_20160827_182022
  • 1 cup beef stock
  • 1 onion, sliced
  • 1/2 green pepper, sliced
  • 1 tablespoon honey
  • 1 tablespoon garlic powder
  • 1 tablespoon parsley
  • 2 tablespoons oregano
  • 1 teaspoon pepper
  • 1 teaspoon basil
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1 bay leaf

 

Place the roast and vegetables into the bottom of a crock pot. Add the rest of the ingredients and cook for 8 hours on low or 4 hours on high. Remove the bay leaf, shred and enjoy!

Tip: Serve over rolls with a mild white cheese and broil for about 20 seconds or until browned.

 

 

 

 

 

 

Easy, Quick and Delicious- Peach Crisp

Did you know that August is National Peach Month? Last weekend on the way home from a mini vaca, I just had to buy from the truck on the side of the road! Nuts would have been added to this recipe if I had some on hand. This peach filled dessert is fresh, tasty and will not disappoint!

  • 5 peaches, pitted and diced
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon

Place the peaches into the bottom of a pie pan. Drizzle the honey over the top as well as the cinnamon.

Topping

  • 4 tablespoons oatmeal
  • 2 tablespoons brown sugar
  • 1 tablespoon butter
  • a pinch of salt

Mix the topping ingredients in a small bowl and sprinkle over the top of the peaches. Place the pie pan into the oven at 350 degrees for about 20 minutes or until heated through and turning brown on top. Enjoy!

 

 

 

Two Ingredient Homemade Iced Coffee

Iced coffee is the best on a hot day! But nobody likes when the ice cubes water it down. These homemade coffee ice cubes create a great flavor and chill your drink too!

Coffee Ice Cubes

  • 1 cup fresh (but not hot) coffee
  • 1 cup vanilla almond milk

Mix the coffee and almond milk and pour into ice cube tray. Freeze until solid and place cubes into plastic bags to be used at your convenience.

Tip: The trays require about 2 cups of liquid total so you would need 4 cups altogether to fill two trays.

Iced Coffee

Mix 6 oz coffee (fresh but not hot) and 2 oz almond milk with 4-5 coffee ice cubes and you’ve got an Emmy Iced Coffee!

Iced coffee makes a warm morning almost refreshing and is a great afternoon pick-me-up too. This recipe requires a little bit of prep time however once made it is great to have on hand for convenience. Enjoy!

 

 

 

Crispy Chicken Wings With Spicy Buffalo Sauce, Garlic Sauce and Orange Chicken Sauce (Paleo)

Happy National Chicken Wing Day! To celebrate, use my Crispy Chicken Wings  recipe to bake your wings to perfection and add one of my favorite sauces to finish them off!

  • 10 chicken wings
  • 1 tablespoon baking powder
  • 1/2 tsp salt

Preheat the oven to 250 degrees and cover a cookie sheet with aluminum foil. Place a metal drying rack on the baking sheet.

Combine ingredients in a plastic bag or mixing bowl and make sure that all the chicken is well coated with the mixture. Cook in the oven for 30 minutes.

Take the wings out of the oven and raise the temperature to 425. Cook an additional 40-50 minutes in the oven.

Coat the wings in your favorite sauce and enjoy!

Buffalo Chicken Sauce

  • 2 tablespoons cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon chili pepper
  • 1 tablespoon apple cider vinegar
  • 5 tablespoons water

Make sure to thoroughly combine the ingredients (to disperse the cayenne pepper) in a large bowl. Coat your wings and serve.

Garlic Sauce

  • 20 cloves of garlic
  • 3 tablespoons olive oil
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 3 tablespoons butter

Completely de skin and peel the garlic, place into an oven safe container and add your olive oil, salt and pepper. Bake in the oven, covered with aluminum foil, at 325 for about an hour or until the garlic is roasted and soft in texture.

Take out of the oven and mash up the garlic mixture with a fork. Add in the butter, combine with the wings and serve.

Orange Chicken Sauce

  • 5 tablespoons orange juice
  • 1 tablespoons honey
  • ¼ teaspoon ground ginger powder
  • ¼ teaspoon cayenne
  • ½ teaspoon apple cider vinegar
  • ⅛ teaspoon sesame oil
  • ½ teaspoon ground garlic powder
  • 2-3 tablespoons sesame seeds

Mix the ingredients in a bowl until well incorporated. Toss the wings in the sauce bowl and serve.

Chicken wings are easy and so versatile. With endless flavors and even more dipping options, they can’t be beat.

Sweet Potato Sloppy Joe Sliders (Paleo)

Spice filled Sloppy Joes are so flavorful and easy to make. Swap the bun for baked sweet potato slices and enjoy my take on traditional Sloppy Joes.

Sweet Potato Slices

  • 2-3 sweet potatoes, depending on the size
  • 2-3 tablespoons olive oil 
  • 1 tablespoon pepper
  • 1 tablespoon salt

Cut length wise and thin and place onto a cookie sheet.  Add the olive oil and seasonings and make sure they are all well coated. Space the slices equal distance apart into the pan and bake at 425 degrees for about 20 minutes and make sure flip halfway through. Set to the side.

Sloppy Joes

  • 1 tablespoon olive oil
  • 3 tablespoons water
  • 1 pepper, chopped
  • 1 onion, chopped
  • 1 pound ground beef
  • 1 cup tomato sauce
  • 1 tablespoon molasses
  • 1 tablespoon honey
  • 1 tablespoon garlic powder
  • ½ teaspoon chili powder
  • ½ tablespoon yellow mustard
  • ½ cayenne pepper

Salt and pepper to taste.

In a sauce pan on medium heat, add olive oil and water and onions and peppers to the pan and cook about 10 minutes. Next, add the beef and cook until brown.

Mix the rest of the ingredients into the meat mixture and simmer about 20 minutes. 

Sweet Potato Sloppy Joe Sliders

Take your sweet potato slices and top them with 1-2 tablespoons of meat mixture and enjoy!
