Where We Are Now: Las Vegas, Nevada

Truth be told, we left two weeks ago. I’m a little behind. Here’s everything we’ve been up to since Houston.

After Houston, we spent a little more time in Texas and visited San Antonio. It was a quick four days but we ate steak at the River Walk and visited the Alamo, you know, San Antonio Texas things.

From Texas we drove through New Mexico and at sunset no less, it was gorgeous. After IMG_20181220_170230about 15 hours in the car, we made it to Sun Lakes AZ, right outside of Phoenix.

We have never been before and my parents live there now, so everything was new to us. We arrived shortly before Christmas and both had time off, what a great way to end the year!

To sum up Sun Lakes, my parents cooked like crazy for us, and we ate all the food. We also

slept in, worked out, and worked after our time off was over. It was a slow, relaxing jaunt but before we knew it, we were off again.

We spent a week in Sedona and a week in Page before leaving AZ. Sedona was amazing. The mountains, the fresh air, the wine, it gives you all the feels! And Page AZ is in the middle of the canyon lands. If you have never been, these pictures are all I need to convince you. It was truly stunning and nothing you’ve ever seen before.

The last week of January and the first week of February were spent in Vegas. We hiked, I biked, and we ate a lot. We also gambled a little, drank some drinks, and explored.

The first night we were there, someone broke into our car. They really only got clothes and shoes, both of which were worth next to nothing, though I’m sure they thought they had scored. If that’s the worst thing that happens to us during these travels, I’ll call us lucky! (But it was a little sad and of course, we wish we still had the things they took. Boo.)

Now, it’s San Diego for a month. Nick has never been and we’re staying in the thick of it all. Thanks for reading=)

Scripture Sunday: Put God on Your Phone

We’re all on our phones too much. All day long, half the night, and everywhere in between. Phone, phone, and more phone.

So why not put God on your phone? It’s something that we’re on, looking at, and using everyday, anyhow.

I love choosing something that’s pretty, or catches my eye and then also has an amazing and refreshing word from God.

This is one of my favorites. It reminds me that God has a plan for me. His plan is to prosper me, not to harm me, and to give me hope, and a future. God is so good!

For any verse, all you have to do is Google ‘bible scriptures wallpaper,’ and there are so many to choose from! If you want a specific verse, just ‘Google bible scripture wallpapers’ and a few of the scripture words to find the one you want.

This is such an easy and fun way to keep God in our sight, literally.

If you’re reading this, I want to pray for you.

Dear God,

Always remind us to keep our eyes on you! We’re so thankful that You have a plan for us. We are so blessed! We praise you and thank you for Your plans to prosper us and give us hope. You are such an awesome God and we’re so lucky to know we can get through anything as long as we have You. I’m Jesus’ name, Amen.

Scripture Sunday: Calling All Prayer Requests

Hi Friends, and Happy Sunday. Today I want to allow you to give me your prayer requests so that I can pray for you!

In fact, this is something I want to ask for more because, let’s be honest, we all have things we need to pray about. And how GREAT does it feel when people rally around us or pray with us or FOR us?

God loves to see us loving on each other. He wants us to care for everyone equally.

Love your neighbor as yourself. Matthew 22:39

This means to care for, reach out, and pray for them, too. So, without further ado, what can I pray about for you? Send an email to emily.rokke@gmail.com or reply in the comments!

If you’re reading this, I want to pray for you.

Dear God, Never let us forget to love and pray for others! You take care of us, so we are able to put ourselves aside, and care for others. We know that You want us to love, pray for, and treat others as we would treat ourselves. Always remind us to put others first and to come to You with everything. In Jesus’ name, Amen.

Garlic Beef and Onions with Green Beans

This crumbled meat mixture is so easy and has such a great flavor. Plus, you can add it to anything. It’s also Keto, Paleo, Whole 30, and just plain healthy, but beyond that, so delicious!Garlic Beef and Onions with Green Beans.jpg

Garlic Beef and Onions with Green Beans

  • 1 tablespoon avocado oil
  • 1 large onion, chopped
  • 10 cloves (or 1 head,) skinned and minced
  • 1 pound ground beef
  • 1/2 cup beef stock
  • Black pepper

Add avocado oil to a skillet on medium heat. Then add the onion and cook for 3 minutes. Add the garlic and cook for an additional minute. Add the ground beef and crumble. When the beef is almost browned, pour in the beef stock and turn up the heat to medium high or until it begins to simmer. Cook until the broth cooks down or about 20 minutes. Add black pepper the taste.

Serve over steamed green beans or broccoli, rice, noodles, roasted or mashed potatoes, or just eat it alone!
